Taconic Dutchess Private Reserve Cognac Cask

Taconic distillery was founded in 2013 by Paul Coughlin and Gerald Valenti as Millbrook Distillery until the change to the present name in 2015, located in the Hudson Valley of New York. A farm to bottle operation, the grains and water are all sourced locally and the distillery has a whiskey-central focus. They are also active in the American Distilling Institute, the American Craft Spirits Association and the New York Distillers Guild. The regular Dutchess Private Reserve is a straight bourbon named after the county in New York the distillery is located in and approximately four years old. This particular edition was aged in new oak barrels for 3.5 years before being finished in ex-cognac casks from Remy Martin for a further six months.

The island of Tasmania has a history of whisky making yet there was a 150 year gap because of old 19th century laws that went unchallenged until Bill Lark founded Lark Distillery in 1992. Since then, Lark has been producing whisky and liqueurs. The distillery was the first in Australia to become carbon neutral in 2021 and while originally started in the Tasmanian capital, Hobart, production has recently moved to a new distillery in nearby Pontville. Before their portfolio expanded, the American market would only receive limited single barrel expressions, such as this Lark Single Malt bottled at 86 proof. Other expressions are different individual barrels at slightly differing proofages but remain the same base spirit. This particular barrel was aged in a small cask that formerly held Australian port.

Westland Distillery was founded in 2010 in Seattle by Matt Hofmann, and the Westland Sherry Wood is one of the three core offerings, along with the Peated and American Single Malt. Like those offerings, the Sherry Wood was moved to the distillery’s Heritage Collection in 2022 to make room for a new signature single malt expression. The base spirit of this whiskey is the same as the American Single Malt, fermented with Belgian Saison Brewer’s yeast, but then finished in ex-Pedo Ximénez and Oloroso sherry casks for an undisclosed amount of time. While there are supplies out on liquor store shelves and this single malt is still available for purchase via the distillery’s online store as of this review, there is no more being currently produced.
