Kilchoman 100% Islay

Still barely over a decade old and thus not quite ready to release aged statements, Kilchoman has used their youth to explore variations on their spirit, often in very creative expressions. One of the rising trends over the past several years has been a focus on terroir. The 100% Islay (3rd Edition) is a dram where the entirety of the process is done on Islay. The barley is grown there, malted there, distilled, matured and bottled there. It’s bottled at a higher alcohol strength but the peat level is lowered compared to their other releases. That is not a common occurrence in today’s world. First launched in 2010, the bottle in this review is from 2012.

Located only a short distance from Edinburgh in the peaceful farmlands of East Lothian, Glenkinchie is one of the few Lowland distilleries left operating in Scotland. Known as “The Edinburgh Malt,” the distillery first opened in 1837, closed for a time, then reopened under new ownership at the end of the 19th century and has remained in production ever since. Not a large producer of single malts, there are currently only two offerings: this 12 year and a Distiller’s Edition, which ages an additional two years in Amontillado sherry casks. Thankfully, under ownership of the Diageo conglomerate, they remain in relative constant supply.

Reading the story of The Belgian Owl is like stumbling upon a lost entry concerning Hobbits by J. R. R. Tolkien. The Owl Distillery offers their product made from spring barley with a love for the land, a sense of adventure and a decided touch of whimsy. Located in the region of Hesbaye, this whisky comes out of a long tradition of beer making. There are essentially three employees at the distillery: the farmer, the financier and the whisky maker. Between them, they have been offering core expressions of spirit and single malt whisky since 2008, both to their native countrymen and to the world. While other distilleries have histories, the gents at the Owl Distillery have crafted their own Legend. The Belgian Owl is the product of their creativity and adventuring.
