Wood Hat Twin Timbers

Wood Hat Spirits was founded in 2012 by Gary Hinegardner. It is so named from one of Gary’s non-distilling hobbies: carving wooden hats. When not carving a wide variety of those hats, Gary and his team are creating bourbons and whiskies made using Missouri sources, from the wooden barrels to the grains using the only wood-fired still in the United States. While the offerings explore a wide variety of corn varietals, the creativity can also be seen in finishes. The Wood Hat Twin Timbers begins as their Rubenesque bourbon made of blue corn that is at least two years old, but then finished in charred pecan barrels, providing both oak and pecan to have voice in the whiskey.

Mingo Creek Craft Distillers, better known by their brand name Liberty Pole, are a craft distillery in southwestern Pennsylvania who deftly weave the line between history and imagination. Their whiskey-focused portfolio includes offerings made using heritage grains like bloody butcher corn and Pennsylvania rye. But they’re not afraid to get creative, as seen by their Peated Bourbon. After seeing what peat could do with with corn, they wondered…why not rye? A few years later, the Liberty Pole Peated Rye was born. The result was so successful, it has become a staple of their portfolio and is released about once a year.

Boasting “…big dreams, bigger goals, and the biggest pot still in the state” Boulder Spirits Distillery brings us their Peated American Single Malt. The recipe is simple: distillers malted barley, a Scottish pot still, #3 char American white oak barrels, aged in an arid high elevation climate, and cut with the celebrated Eldorado Springs water. Their outlook is that peat can be a piece of the whiskey, and not the defining attribute. Aged for a minimum of three years, the Boulder Spirits Peated Malt uses is a lightly peated single malt made in the tradition of Scotland, with American ingenuity.
