In 2015, Penderyn launched their Dragon range, three whiskies bearing the names of Legend, Celt, and Myth, along with the bold red dragon of Wales on the label. The range serves as an introduction to the brand, separated from their more premium malts, the Gold range. One of the few whiskies with a Kosher certificate. The Penderyn Celt was originally (and mistakenly, at first) finished in ex-Kilchoman barrels but now quarter casks from Laphroaig are used.
Cardhu 12 Year
While it might be infamously known for the “pure malt controversy” from the early 2000s, Cardhu has been in almost continual production since its founding by John and Helen Cumming, though for much of its history was known as Cardow after the original farm the distillery started on in 1824. There is a great deal of history around Helen and her daughter-in-law Elizabeth Cumming used in their marketing, for both women ran the distillery during early years to develop and refine the character of the whisky. Around the turn of the 20th century, Cardhu was sold to Johnnie Walker. Cardhu was for many years one of the smallest distilleries in Scotland and has been a staple in Johnnie Walker blends ever since. The current iteration of the Cardhu 12 year began in 2006 and is part of a range that includes the 12, 15, and 18 year single malts, plus two with No Age Statements.
Highland Park 15 Year
Highland Park is known in using sherry casks throughout their core expressions for the entire aging process, not just a finish. Whereas the 12 and 18 year whiskies use mainly Spanish oak, the Highland Park 15 uses American oak (though not American sherry, thankfully). Not content with one cask alteration, the 15 is aged in 30% first fill sherry casks and 70% refill. While not in the same class of exclusivity as Highland Park’s Valhalla Collection, it is a little more elusive than the celebrated 12 year expression.
