Eifel Single Malt

Eifel distillery is made by husband and wife Stephan and Carolin. Stephan handles the mashing and distilling and Carolin handles the labeling and bottling, hand labeling each bottle. Their whisky is first distilled in a column still and then the second distillation is done in a copper pot still. Their total output is so low, their whiskey is only typically found in the Eifel region of Germany. Thankfully they have an agreement with Anthem Imports, which brings their offerings to the US market in limited releases. The Eifel Single Malt German Whisky was distilled in 2012 and 2013, aged for 4 years in ex-Bordeaux American casks before aging for 4 more years in ex-cream sherry casks. Only 300 cases were made.

The usage of oats in whiskey production is extremely rare, and for good reason: it has a low yield and is thicker, making it more difficult to work with compared to other grains. Still, that has not kept the distillers at Corsair from experimenting with it. The Corsair Oatrage continues the distillery’s penchant for pun-themed names that highlight the grain (at least until their recent rebranding efforts). This single pot still whiskey is made from 51% malted oats, 27% 6-row malted barley, and 22% coffee malted barley. Coffee malt is a 2-row malt that has been moderately roasted, imparting an aroma and taste of coffee, and is often used in dark beers in the same way chocolate malts are.

Whiskey Del Bac began production in 2013 in Tuscon, AZ. Founded by Stephen Paul and his daughter Amanda, the distillery is perhaps best known for their mesquite usage. Asking the very valid question of why barley couldn’t be smoked with the American Southwest’s native mesquite tree much like peat is used in Scotland and Ireland, Whiskey Del Bac has found resounding success since releasing their lineup, both in sales and industry awards. They are also a grain-to-glass distillery, using as many native elements in their production as possible. Named after the local Mission San Xavier del Bac, Del Bac Dorado represents everything we love about American craft whiskey, from the local sourcing to the experimentation to the crafting of a spirit unique to a place and people.
