The Dublin Liberties Distillery, as you might be able to tell from the distiller name, is intensely proud of their roots. The Liberties section of Dublin is a famous and storied part of the city with a history too checkered and daring to include here. Everything about the distillery is intricately tied to historical people and places from the Liberties or connecting to Ireland more broadly. Take a tour and you’ll see, trust us. This particular offering is 5 years old and made in collaboration with The Dead Rabbit Grocery & Grog in New York City. This Irish Whiskey bar is in turn named after the Dead Rabbits, a notorious gang of Irish immigrants in the mid-1800s whose rivalry with the Bowery Boys eventually resulted in riots that lasted for days.
Copperworks American Single Malt
Copperworks Distilling was founded in 2008 by Jason Parker and Micah Nutt in Seattle, both of whom have a background in brewing. The first number of years were spent learning about various elements of the craft spirits distilling via their work with gin and vodka, which they then used to inform their whiskey production. They are currently releasing their whiskey in individual batches, wherein each release has its own personality. Eventually the goal is to use this variety – along with the time to continually create and lay down stock – to hone in on a flagship release with core profile. They are active in the broader whiskey community in the United States and are at the forefront of regulatory standardization through their membership in several trade groups.
Glenrothes Sherry Cask Reserve
The Glenrothes distillery is guided by what it calls its four corners: Water, Slow Distillation, Sherry Seasoned Casks, and Natural Color. The distillery also relaunched its brand recently, doing away with the previous method of categorizing its line and returning age statements. This is a refreshing choice given how many brands are going in the opposite direction. While the current line is mostly age statements, however, the Glenrothes Sherry Cask Reserve is from before the relaunch and, as the name would indicate, entirely aged in ex-sherry casks. It first appeared in 2014. We bought the bottle some time before this review went live, so what was once an easy introduction to a sherried single malt is now about a discontinued offering.
